After crushing and pressing, the juice was partially cold settled for 2 days and then cultured yeast yeast was added prior to the commencement of fermentation in stainless steel tanks. Two thirds of the way through the ferment, the must was added to one new French oak barrique and one older French puncheon. Fermentation lasted for 21 days in total. The wine was matured for 5 months in 30% new oak and 70% old oak before it was then lightly fined with skim milk, sterile filtered and bottled on 31 August, 2015.
This elegant, cool climate Chardonnay, straw yellow in colour displays aromas of citrus and savoury spice. The palate reveals melon and yellow peaches complemented by a subtle pithiness and a crunchy, acidity.
Should drink well from 2017 until 2022 or beyond.
This wine pairs exceptionally with a pine mushroom and speck risotto.
