Our Dogs Day Chardonnay is made from grapes grown at Mt Panorama Estate vineyard in the middle of the iconic race circuit in Bathurst. It is a blend of wooded (70%) and unwooded (30%). The Wooded component consisted of French oak with barrel fermentation and extended lees contact to add extra complexity to the aromas of melons and white peaches. The taste is fresh with good texture and length revealing its cool climate origins.
Ready to drink now and will drink well for the next two or three years
Good match with fresh fish and chicken dishes.
All of the grapes were crushed and lightly pressed and partially cold settled for twenty four hours. The majority of the juice was transferred to French oak barrels for a slow and cool ferment which lasted about two weeks. The remaining 30% went directly into a stainless steel tank. The two components were then blended together prior to bottling in
September, 2014. A total of 185 cases was made.
