DESCRIPTION
A fine cool climate Shiraz made with fruit hand harvested from our Mt. Panorama Estate vineyard on March 4 and 9. The must was cold soaked for 3 days with 10% whole berries before being fermented with wild yeasts. The wine was aged in old French oak for 15 months. After a light egg white fining, the finished Shiraz was bottled on August 22nd 2017.
The 2017 Shiraz is back to the cool climate style that 15 and 16 moved away from to a certain degree. The nose is showing black pepper, raspberry, black cherry, liquorice, pimento and some delicate undercurrents of earth. In the mouth we’re greeted with purple fruits, pepper and savoury tannins.
FOOD MATCH
Most red meats, duck and red sauce pasta dishes. Try this wine with a Roast Lamb with garlic and rosemary.
CELLARING
This wine will age nicely until at least 2025.
