A fine cool climate Shiraz made with fruit hand harvested from our Mt. Panorama Estate vineyard on March 4 and 9. The must was cold soaked for 5 days with 10% whole bunches before being fermented with wild yeasts. The wine was aged in a combination of 10% new, primarily French and some American and Hungarian Oak for 15 months. After a light egg white fining, the finished Shiraz was bottled on 1 September 2017, 367 dozen were made in total.
The resultant wine is another fine example of an elegant, cool climate Shiraz. Deep crimson in colour, the nose hints of ripe cherries, cinnamon and vanilla. In the mouth the wine is medium bodied with red cherries, currants, blackberry and a savoury, nutty spice rounded out by delicate tannins.
Most red meats, duck and red sauce pasta dishes. Try this wine with a Roast Lamb with garlic and rosemary.
This wine will age nicely until at least 2025.
