The fruit was hand harvested by a team of friends and neighbours on March 5 prior to being pressed the same day. 50% went straight to barrel without any settling and the other 50% went to stainless steel where it was settled. The portion in barrel underwent a spontaneous fermentation and cultured yeast was added to the stainless portion. The wine was matured in 50% stainless steel, 25% new and 25% old french oak for a period of 6 months prior to bottling in September.
This is an elegant Chardonnay, displaying a nose of brioche, melon & lemon rind as well as a pronounced minerality. The palate is tight and austere showing lemon juice, green apple and grapefruit all carried through by superb acid, balanced by a lingering creaminess. With this pronounced acid and minerality, we are convinced this 2017 Bella Luna will age very well.
A beautiful pairing with fresh seafood; oysters, tuna sashimi and king fish ceviche are perfect matches. Treat yourself!
