One of the longest standing wines in our range, with the fruit coming from our Bella Luna vineyard on our property in O’connell. The fruit was harvested on April 4 by friends and neighbours. The Cabernet and Merlot were vinified separately and both went through a 3 day cold soaking prior a cool fermentation to preserve the delicate aromatics. The wine was aged for 16 months in old oak prior to being bottled on August 22, 2018.
The wine is a vibrant crimson colour, with enticing aromas of plum, tabacco, peppermint and cassis in the background. This is a medium bodied wine that displays cherries and spice rounded out by fresh, lively and mouthfillng tannins.
Hold onto this one until 2020 at least, it should age well right through until 2027 or longer.
A lamb tagine a bunch of herbs, some preserved lemon and Israeli cous cous matches beautifully.
