We are proud to acknowledge the Wiradyuri name for Mt. Panorama on this wine, Wahluu. We have an Intellectual Property agreement with the Wiradyuri elders to use this term, by doing this, we are paying our respects to the place on which our livelihood depends and, simultaneously, the culture to which this place has been foundational for thousands of years.

Made with fruit from Wahluu. Hand harvested 16 and 17 February, it was crushed and pressed, then cold settled for 3 days before racking off grose lees. Fermented spontaneously, cool and steady at about 14 degrees in stainless steel tank. Regular battonage over a period of 4 months during which the base wine was stabalised before being sent away for the secondary fermentation process. 30 months of bottle age before disgorgement and a light dosage of 3 g/L.

The 2017 Wahluu Blanc de Blancs is a delicate green / straw color in the glass with a delicate bead. It jumps from the glass with aromas of green apples and pears, malted bread crust, wet stones and a slight herbaceousness. It is tightly wound and austere. The minerality shines in this refreshing wine, the perfect aperitif for any occasion.

Cool fermented in tank and stirred regularly before the 2nd fermentation and 30 months on lees. Granny Smith apple and nashi pear gelato scents. Flinty and saline notes of oyster shell, too, before a malty leesiness leads to a creamy mid palate and a tail of biscuit and brioche notes, lingering long. An aperitif style.
