DESCRIPTION
This is the first single vineyard Cabernet Merlot we have ever made coming solely from our home vineyard at O’Connell. When the fruit came in on the 25th of March, we were thrilled with the quality. We crushed and destemmed the fruit to an open, 1500 liter fermenter, for a 4 day cold soaking prior to the commencement of a spontaneous fermentation. The wine was then kept for 16 months in a mixture of one third new, and two thirds older French oak barriques.
The resultant wine is simultaneously showcasing phenomenal intensity and poise. On the nose, there is luscious black plum and mulberries, intertwined with a beguiling, vanilla, cinnamon and bay leaf. In the mouth there is pronounced savoury presence, evoking black olive carried by ripe black currant and cherry fruit. A fantastic wine that has a long life ahead of it.
CELLARING
Our prediction is that it will be drinking at it’s peak from 2023-2033.
FOOD MATCH
A lamb tagine a bunch of herbs, some preserved lemon and Israeli cous cous matches beautifully.
