2018 MPE Cabernet Sauvignon

The Cabernet grapes were picked at least two weeks earlier than usual on 23 March. The grapes were cold soaked for 5 days before crushing and adding cultured yeasts. The grapes were crushed with the rollers closed and transferred to an open 1 tonne fermenter. Three quarters of the way through their primary ferment, some of the free run was transferred to one new French puncheon and one old barrique. After 15 months in oak, the wine was lightly filtered and bottled in late July 2019.

This is exceptional cool-climate cabernet, somehow transcending the green edges of its blended sibling to showcase a sheath of impeccably tuned tannins, ripe and juicy. This makes all the difference! Spearmint, blackcurrant, olive, chilli, bay leaf and a swathe of firm, saliva-sapping tannins driving a long finish.
