WINEMAKING NOTES

Hand harvested in 2 lots on 16 and 22 March- fruit was from the Mt. Panorama Estate vineyard. We made the 2019 wines in true garagiste style as we built our winery and moved out of the previously rented space. The fruit went through a variety of extractions, some whole bunch, some destemmed and crushed and some 100% whole bunch / carbonic maceration. All wild yeast fermented. Aged in old oak for 20 months which is longer than usual due to the lack of a vintage in 2020. Bottled on 4/2/2021, a total of 2000 bottles.

TASTING NOTES

Coming from the depths of a drought year, the 2019 Shiraz is of the darker fruit spectrum to what we generally produce- some longer time in the winery allowed that intense fruit to develop into some pleasant savoury characteristics.

It’s deep crimson color with some brickish hues. This shiraz is showing plenty of plum and bramble fruit sitting alongside rhubarb, rosemary and earth. In the mouth the fruit speaks of fresh blackberry, plum, liquorish and gentle, but savoury tannins. A real joy to drink, put it in the decanter, let it breath and it will become even more expressive.
