One of the three wines we made in the challenging 2020 vintage. This fruit came from our own Bella Luna Vineyard and was a field blend of all three varietals, Chardonnay, Cabernet Sauvignon and Merlot. We only had a total of 500 kg in total because of the effects of the drought.
So how did we make it? The fruit was handpicked on Feb 24th and spent 48 hours in the cool room prior to the whole bunches being stomped with our feet and then lightly pressed. We then settled the juice in the cool room for 2 more days before racking off of gross lees into an old French barrique for a slow, cool, spontaneous ferment. It remained in the barrel for six months.
To give a bit more colour and flavour, we added about 75 litres of Merlot giving about 25 % Merlot, 35% Cabernet Sauvignon, 27% Chardonnay and 13% Merlot. The wine was bottled without fining and a light filtration on October 22nd, 2020.
Light Scarlett very translucent. Cherry leather and dried herbs on the nose. Very savoury, high acid, sour plum and something almost resembling cheese rind. Some grip, finishing loooong.
