Hand harvested on 2 seperate dates (March 4th & 9th), the best Shiraz fruit from our Mt. Panorama vineyard has gone into this wine. The fruit was lightly crushed and fermented in an open top fermenter with 10% whole bunches. After 5 days of cold soaking, a spontaneous ferment commenced throughout which, the must was hand plunged 3 times a day, before being pressed and aged for 15 months in 1 – 3 year old French oak barrels for 15 months.
Deep, bold, purple colour with restrained aromas of cherry, earth and toasty oak. Medium to full-bodied with a strong vein of tannin and great structure complemented by dense berry fruit, rhubarb and black pepper which will allow this wine to age gracefully. This wine’s best drinking is ahead, and it will see a long future.
Put this one away until 2019. It will still be drinking beautifully in 2030.
