WINEMAKING NOTES

Made with 84% Shiraz from Freeman Vineyards in Kingsvale, NSW and 16% Sangoivese from First Ridge in Mudgee, NSW. The 2023 Shizangio is made using a combination of whole bunch fermentation as well as whole berry, with a varying array of maceration lengths and temperatures across components. The lions share of the wine was matured in a 2000L Nico Velo concreate tank named Maeve after the esteemed Maeve Omara. That component was held in tank for 10 months with sulphur addition in October 2023 1 month prior to racking and blending for bottling in February 24. The wine was bottled without any fining or filtration.
